I'm looking for a chassidic Torah commentary on the level of pshat or a chassidic commentary easy to read?

There is a set of seforim called Maayanos Hepshat by Rav Dovid Fink which is exactly what you are looking for, unfortunately, it seems that the set isn't available in the states right now.

A great chumash that tries to render the simple meaning of chumash in it's translation/commentary (while being consistent with Torah Shebal Peh) and beautiful chassidic insights as well.
