Eating meat, bread, and hot food on Shabbos

A friend was on a diet and was told that if he does not want to eat bread on Shabbos, he does not have to. Is this correct? Do we have an obligation to wash for bread and have three meals on Shabbos? Similarly, if one does not wish to eat meat, is it enough to just wash and eat a paereve seudah? Lastly, what is the obligation of eating warm/hot foods on Shabbos? Is this an actual requirement or only if one so desires?
