That's really difficult to say, it heavily depends on the community and the accepted local custom. Usually, the shadchan also acts as a middle-man/middle-woman to facilitate needs of both parties. If the man is very interested in the lady, but the lady doesn't feel very interested in the man, the shadchan will usually be the one to facilitate the communication between the two about these matters.

By the way, you can usually tell by the way a person wears his tallis: the accepted custom in most askenazic shuls is that the Yekkes/German-Jews who haven't yet been married will wear a hat while davening while those who have been married will wear their tallis over their head.

FYI: Using schach made of living things will almost invariably lead to finding vegetation debris throughout your sukkah (and possibly in your food). In previous years, we used palm fronds, but they always shrivel up, wilt, droop, and leave debris everywhere. Your mileage may vary.
