I don't buy your explanation that it stems from the Shalom Aleichem prayer. The plural greeting is common all throughout the Middle East. Arabs say "As-Salamu Alaykum". Your second explanation seems to be correct though.

When I was in Lubavitch Yeshivah, I remember the Mashpia saying that the best thing to do was to put it on sitting and then stand for the bracha thus fulfilling the Zohar and the Ashkenazic custom of saying Berachas of Mitzvahs while standing.

DO NOT use shoe polish to darken your Tefillin straps. Many shoe polishes contain animal fat. High quality ones may contain ingredients like mink oil. Shoe dye would probably be ok but shoe polish is an oil based product which always contains some sort of wax/fat/oil and should not be assumed to be kosher.
