Nice! I find it historically interesting how he discusses the proliferation of a faster and more haphazard baking process 'within the past 20 years' which caused the flour to remain on the matzos.

Good stuff @Alex. I edited to reflect that. Also, this shouldn't be tagged as Agada, part of the oddity here is that this is found in halachic areas of the Gemara.
