Hashem "thought" to create the world with Din but then saw that the world wouldn't be able to stand , so He preceded the Mercy to the Din. Meaning, there still is Din, but now mercy is now in control. So, I guess the world's nature was changed after is was created.

Well, in the beginning it says Elokim, because I think that is the way the world started off, but then later it says (2:4) "on the day Hashem Elokim made the world." See Rashi on Bara Elokim, and for a deeper explanation not meant for this site see the Gur Arye.

@monica Because when he told Yaakov that they were eating Ever Min HaHai, it wasn't true they really made that animal with Sefer Yesira, and therefore it wasn't a real animal. Then I believe that Yaakov told Yosef that they made it with Sefer Yesira and it was okay.

You said "according to many". However, according to others it doesn't count as learning. That's why in Siddur Od Yosef Hai they give a list of a few pesukim, mishnayot, and gemarot "latzet lekol hadeot." I guess my explanation only fits according to those who hold it doesn't count as learning
